The Role

We are seeking a highly experienced and strategic Operations Director to oversee the performance, development, and continued growth of the Sale e Pepe brand.


This is a senior leadership position within Thesleff Group, with responsibility for multiple sites, their General Managers, and the delivery of outstanding operational standards.


Reporting directly to the COO, you will ensure each venue meets its commercial, service, and brand objectives, while maintaining the group’s culture of excellence and hospitality.

Key Responsibilities

  • Lead, mentor, and support the General Managers of each site to achieve operational and financial targets.
  • Drive brand consistency and service excellence across all Sale e Pepe locations.
  • Monitor and analyse financial performance, implementing initiatives to maximise profitability.
  • Ensure compliance with all licensing, health & safety, and food hygiene regulations.
  • Lead talent development to build strong, high-performing teams.
  • Work closely with senior leadership on strategic planning and the continued development of the brand.
  • Maintain close relationships with suppliers, partners, and the wider hospitality community.


About You

  • Proven multi-site management experience within premium restaurants or hospitality groups.
  • Strong experience within a high-end or luxury restaurant group.
  • Strong commercial acumen with the ability to analyse data and implement improvements.
  • Exceptional leadership skills with the ability to inspire and develop teams.
  • A strong understanding of brand consistency and the ability to ensure standards are delivered across different locations.
  • Flexible, resilient, and highly organised, with the ability to thrive in a fast-paced environment.
  • Experience driving performance, developing teams, and supporting the continued growth of an established restaurant brand.
