The Role: Sushi Chef de Partie

We are looking for a talented and passionate Sushi Chef de Partie to join our opening kitchen brigade.

As a Sushi Chef de Partie, you will play an integral role in delivering MA/NA's sushi and raw offering, preparing beautifully presented dishes with precision, consistency and respect for the finest seasonal ingredients.


Working closely with the Executive Chef, Senior Sous Chef and Sous Chefs, the Sushi Chef de Partie will help maintain the exceptional culinary standards that define MA/NA while continuing to refine their technical expertise.


The Sushi Chef de Partie will also have opportunities to collaborate with and learn from our specialist sushi and omakase teams across Los Mochis, JUNO Omakase and LUNA Omakase, gaining exposure to a range of techniques, premium ingredients and service styles rarely found within a single hospitality group.


This is an outstanding opportunity for a Sushi Chef de Partie who is passionate about Japanese cuisine and is looking to build a long-term career within one of London's leading premium restaurant groups.


What You'll Be Doing

  • Prepare and present exceptional sushi, sashimi and raw dishes with consistency and precision.
  • Demonstrate excellent knife skills and fish preparation techniques.
  • Handle premium seasonal ingredients with care and respect.
  • Maintain exceptional presentation standards throughout every service.
  • Ensure your section is fully prepared and organised for service.
  • Work collaboratively with the wider kitchen brigade to deliver a seamless guest experience.
  • Maintain the highest standards of food safety, hygiene and cleanliness.
  • Minimise waste whilst maximising quality and consistency.
  • Support junior chefs and contribute positively to the kitchen culture.
  • Continue developing your Japanese culinary knowledge and technical skills.


We're Looking For

  • Previous experience as a Sushi Chef de Partie or a strong Demi Chef de Partie ready for promotion.
  • Excellent sushi preparation and knife skills.
  • Experience working with premium seafood and Japanese ingredients.
  • Passion for Japanese cuisine and continuous professional development.
  • Calm, organised and able to perform under pressure.
  • Exceptional attention to detail.
  • Positive attitude and strong teamwork skills.
  • Excellent understanding of food safety and HACCP.
  • Full right to live and work in the UK.
