Sous Chef – Los Mochis Notting Hill


Los Mochis Notting Hill is looking for a talented and ambitious Sous Chef to join our award-winning kitchen team in West London.


Blending the bold flavours of Mexico with the precision and elegance of Japan, Los Mochis has built an internationally recognised dining experience that celebrates creativity, quality, and exceptional hospitality.


As Sous Chef, you will work closely with the Head Chef to lead the kitchen team, maintain exceptional standards, and support the delivery of a high-quality service across all sections. This is a hands-on leadership role suited to a strong chef with excellent organisational skills, calm leadership, and a genuine passion for premium cuisine.


Given the nature of our menu, previous sushi and Japanese cuisine experience is essential for this role.

You will play a key role in team development, service standards, food quality, and kitchen operations, while contributing to an environment built around professionalism, teamwork, and attention to detail.


Key Responsibilities

  • Support the Head Chef with the day-to-day running of the kitchen
  • Lead and motivate the team during prep and service
  • Maintain consistently high standards of food quality and presentation
  • Support training, coaching, and development of junior chefs
  • Ensure smooth service across all kitchen sections
  • Monitor stock control, ordering, and minimising waste
  • Maintain food safety, hygiene, and HACCP standards at all times
  • Help drive a positive and collaborative kitchen culture
  • Assist with menu development and seasonal dishes


Requirements

  • Previous experience as a Sous Chef within a high-volume premium restaurant
  • Strong sushi and Japanese cuisine experience is essential
  • Experience working with fresh, high-quality ingredients
  • Strong leadership and communication skills
  • Calm and organised under pressure
  • Good understanding of kitchen financials, stock control, and labour management
  • Passion for hospitality and developing people
